Barley grass powder is made from the dried young leaves of the barley plant. It is believed that the cultivation of barley's young leaves first took place as early as 7000 BC.
At the early stage of its growth, the barley plant is closer in composition to vegetables than grains, hence the name 'barley grass'. This concept is similar to that of wheat grass. There is said to be very little difference between the nutritional contents of barley grass and wheat grass.

As they grow, the nutrient content of young cereal grasses change rapidly. The nutrient concentration - vitamins, minerals, enzymes, amino acids, chlorophyll - deteriorate significantly.In its young state, however, barley grass contains extremely high levels of the abovementioned nutrients. Barley grass powder thus contains very dense nutritional and healing properties in a concentrated form that is easily assimilated by our digestive system.

There are no known toxic effects to consuming barley grass.

As with all herbs and foods, for the best effect, it is desirable to use barley grass powder which is made from organic barley grass.

Barley grass is a 'concentrated' nutritious whole food offering balanced nutrition to the body. Barley grass powder, like most types of vegetable powders, is very easily digested by the body, thus allowing the body to use its nutrients within a matter of minutes.   -high amounts of enzymes, including the antioxidant enzyme, superoxide dismutase (SOD)

  -magnesium

  -manganese

  -phosphorus

  -potassium

  -high amounts of organic sodium - apparently more than 25 times the amount in celery; organic sodium helps in joint health as well as improves digestion

  -zinc
Barley grass is also rich in living chlorophyll. Chlorophyll has the following benefits and effects:

Common ways to consume barley grass

I do not know of many people who drink freshly pressed barley grass juice, although that would be the best method to reap the full benefits of the abundant enzymes in barley grass.

Barley grass is commonly taken as barley grass powder. The manufacturing process for such powder retains most of the nutrients and possibly also some of the enzymes. Barley grass powder can be mixed with raw juices or water. This is a convenient way to consume it and the one which I use most often. I find that it makes my juices tastier too!
Conclusion

In my opinion, and I think many others also agree, barley grass, though bitterer, is a lot more palatable than wheat grass. The detoxification reactions to taking barley grass are also much milder. Thus, green barley grass is an excellent substitute if you would like to reap the nutritional and healing benefits of one of Nature's green superfoods, but are unable to tolerate wheat grass juice.

What is Barley Grass?
Barley is an annual grass. Barley grass is the leaf of the barley plant, as opposed to the grain. It is capable of growing in a wide range of climatic conditions. Barley grass has greater nutritional value if harvested at a young age.
What is it used for?
Traditional/Ethnobotanical uses
Barley is considered to be the first cereal grain cultivated by humans. Its medicinal and food use dates back to 7000 BC. Crop reports on barley date back to 2440 BC, and the Chinese were cultivating barley circa 2000 BC. Since biblical times, ancient Asian and Middle Eastern cultures reportedly included young wheat and barley grass plants in their diets. Historically, the plant species was used in the treatment of skin, liver, blood, and GI disorders. Ancient Greeks used the mucilage derived from the cereal to treat GI inflammations. Gladiators ate barley for strength and stamina. The Roman physician, Pliny used barley as part of a ritualized cure for boils.
Nutritional
In 1940, it was explained how the vitamins, minerals, and protein in the cereal grasses are essential to animals and humans. A dehydrated preparation of cereal grass called “cerophyl” was approved as an “accepted food” by the Council of Foods of the American Medical Association in 1939. Later, synthetic nutrients were added to a number of foods, and multivitamins gained popularity. The juice of barley grass contains beta carotene, vitamins B1, B2, B6, B12, pantothenic acid, and folic acid. Minerals present include potassium, calcium, iron, phosphorus, and magnesium. Other constituents are chlorophyll, amino acids, protein, fiber, and enzymes. Cobalamin or vitamin B12 deficiency may be avoided in vegetarian diets by supplementation with dehydrated barley grass juice.
Antioxidant activity
Barley leaf extract has the ability to scavenge free radicals. Reactive oxygen species have been shown to play an important part in mediating the production of pro-inflammatory cytokines and can be instrumental in the pathogenesis of diseases such as rheumatoid synovitis, arthritis, and gout. Animal data shows an increased production of oxygen-free radicals with barley leaf extract added to the diet. Clinical studies show blood levels of oxygen-free radicals were reduced by supplementation with 15 g/day barley leaf extract in patients with type 2 diabetes mellitus. Similar results were noted in nondiabetic, hyperlipidemic patients. More clinical studies are needed to show the extent of benefits in humans.
Cancer prevention
Barley grass extracts protect human tissue cells against carcinogens. The mechanism of action is unknown but may be associated with the plant's antioxidant activity or its chlorophyll content. It has been suggested that complexes may be formed between the carcinogen and the chlorophyll that may inactivate the carcinogen. In addition, antioxidants, including superoxide dismutase, found in high concentrations in green barley juice protect against radiation and free radicals. Research  reveals no clinical data regarding the use of barley grass for cancer-preventive properties.
Hyperlipidemia
Cholesterol-lowering effects have been attributed to the beta-sitosterol components, in part. Beta-sitosterol is thought to act by inhibiting the intestinal absorption of cholesterol and accelerating its catabolism to bile acid. Preliminary animal and clinical data show that total cholesterol and LDL cholesterol levels were lowered. HCL cholesterol levels were increased. More clinical studies are needed to be conclusive.
Other uses
Many claims have been made regarding the health benefits of barley grass supplements. Suggested benefits include treatment of HIV infection, detoxification of pollutants, and boosting energy and immunity. However, objective evidence supporting many of these claims is lacking.
What is the recommended dosage?
A dose of 15 g/day dried barley leaf extract has been used to lower cholesterol.

Contraindications have not yet been identified.

Information regarding safety and efficacy in pregnancy and lactation is lacking.
Interactions
None well documented.
Side Effects
Although hypersensitivity to barley products typically is associated with the seed and not the green leaves or shoots, patients with celiac disease or other sensitivities to barley probably should avoid use of barley grass.
